Chilli & Garlic Chicken Buddha Bowl

 

This recipe is GLUTEN FREE

Ingredients (for 1 serving):

  • 1 Chilli & Garlic Green Farm Chicken Fillet

  • ½ red pepper

  • 80g broccoli

Dressing:

  • 6 tbsp extra virgin olive oil

  • 3 tbsp lemon juice

  • 1 tbsp of honey

  • Season with salt & pepper

To serve:

  • Sprinkling of sesame seeds

  • Finely chopped spring onions

  • Delicious served with rice

  • Salt and pepper to taste

Method:

  • Slice the chicken into bite sized pieces.

  • Chop the broccoli and red pepper into small chunks and stir-fry for 2-3 minutes in a hot pan. 

  • Add in your chicken pieces for a further 3 minutes until heated through.

  • To make the dressing simply add the dressing ingredients together in a bowl and mix well.

  • To serve add your chicken and veggies to a bowl with rice and top with spring onion, sesame seeds and drizzle the dressing over the top.
