Middle Eastern pitta Recipe

 

Makes 2 Pitas

Assembly time 5 minutes

Ingredients:

  • 2 whole meal pitta - toasted

  • 4 tbsp hummus

  • Pack of Green Farm Simply Chicken Breast Pieces

  • Handful baby spinach,

  • 20g of jarred roasted red pepper

  • ½ tsp sumac yoghurt

  • 4 tbsp low-fat Greek yoghurt

  • 2 tbsp pomegranate seeds

  • 2 tbsp pumpkin seeds 

Method:

  1. Mix the sumac and yoghurt, Season to taste with salt and black pepper

  2. To assemble the pitta, cover one side of the pitta with 2 tbsp of hummus, add half the spinach and roasted red peppers.

  3. Add half the chicken pieces, drizzle with the sumac yogurt. Scatter the pomegranate and pumpkin seeds over the yoghurt. Close over the pita, repeat with second pita and enjoy!
