Power-packed turkey pesto bowl Recipe

Ingredients:
200g couscous
1 tsp dried mixed herbs
Pinch salt and freshly ground black pepper
75g black olives - chopped
100g of jarred sundried tomatoes – chopped
8 cherry tomatoes – halved
4 tbsp of pesto of choice
100g Feta – crumbled
2 tbsp pumpkin seeds
3-5 slices of Green Farm Added Benefits Turkey Breast
Method:
In a medium bowl add the couscous, salt, pepper and mixed herbs. Add boiling water to 1 cm above the couscous, cover the bowl with a plate or plastic wrap and set aside for 5 minutes.
Mix the Green Farm Added Benefits Turkey and two tbsp of pesto, coating the turkey.
Using a fork fluff the couscous and mix with the olives and sundried tomatoes
Mix the rocket, cherry tomatoes and remaining pesto together.
To build our bowls simply, add the couscous, then to the side, add the rocket and tomatoes, top with the turkey, scatter the feta and pumpkin seeds over the bowl and enjoy.
