Protein-Packed Pasta Salad Recipe

 

Serves: 2

Prep and cooking time: 15 minutes

Assembly time: 2 minutes 

Ingredients:

  • 150g Whole meal pasta

  • 100g Frozen peas – defrosted

  • 6 slices of Green Farm Added Benefits Chicken Breast - chopped

  • 50g baby spinach

  • 1 x 400g tinned chickpeas – drained and rinsed

  • 75g feta – crumbled

  • 100g pesto

  • 8 cherry tomatoes – halved

  • Pinch salt

  • Pinch freshly ground pepper

  • 2 tbsp pumpkin seeds

Method:

  1. Cook pasta according to pack instructions for al dente. When cooked drain and rinse with cold water set aside.

  2. To assemble the salad simply mix all the ingredients together until the pasta is well coated. Garnish with the pumpkin seeds (or chopped hazelnuts
