Pepper & Garlic Turkey Avocado Salad
Ingredients:
2 boiled eggs
½ ripe avocado
10 string beans
3 radish
Mixed leaves
Cracked Black Pepper & Garlic Turkey Slices
For Dressing
Juice of ½ a lemon
1 tsp of Dijon mustard
¼ tsp of garlic powder
1 tsp of honey
3 tbsp of extra virgin olive oil
Salt & pepper
Method:
Place the eggs in a saucepan and cover with cold water. Bring to the boil then reduce the heat to a gentle simmer for 5-10 minutes, depending on how you like your egg cooked. Run cold water over them immediately after cooking, then peel and quarter.
Blanch the string beans for 3-5 minutes
Peel and slice your avocado and thinly slice your radishes.
For the dressing simply add all ingredients together in a container and stir well.
