Pepper & Garlic Turkey Avocado Salad

Ingredients:

  • 2 boiled eggs

  • ½ ripe avocado

  • 10 string beans

  • 3 radish

  • Mixed leaves

  • Cracked Black Pepper & Garlic Turkey Slices

For Dressing

  • Juice of ½ a lemon

  • 1 tsp of Dijon mustard

  • ¼ tsp of garlic powder

  • 1 tsp of honey

  • 3 tbsp of extra virgin olive oil

  • Salt & pepper

Method:

  • Place the eggs in a saucepan and cover with cold water. Bring to the boil then reduce the heat to a gentle simmer for 5-10 minutes, depending on how you like your egg cooked.  Run cold water over them immediately after cooking, then peel and quarter.

  • Blanch the string beans for 3-5 minutes

  • Peel and slice your avocado and thinly slice your radishes.

  • For the dressing simply add all ingredients together in a container and stir well.
